Olifantsberg Grenache Noir
This is an aromatic and refreshing wine with wild strawberry and lifted herbaceous notes. This wine also shows grippy tannins and is supported by a naturally high acidity making it fresh and delicious.
Small batches of natural fermentation took place in French oak casks and open fermenters. A portion of whole bunches were included. Soft punch downs were performed. Some batches had extended maceration on the skins to add to complexity. Malolactic fermentation took place in oak barrels. Only a soft prefiltration took place prior to bottling. The different parcels were kept separate and went through malolactic fermentation in seasoned french oak 300l barrels. After 6 months in barrel, the wine was blended and the final blend aged for an additional 4 months.
